Green Beans with Sugar Snap Peas & Mint
Ingredients
- 1 pound fresh green beans trimmed and cut diagonally into 1 1/2 inch pieces
- 6 oz fresh sugar snap peas cut diagonally in half
- 2 Tb butter
- 1 1/2 ts finely chopped min
- 1 1/2 ts grated lemon zest
- 1/2 ts salt
- 1/4 ts ground pepper
Directions
- Put the green beans in a bowl with water and cover with plastic wrap. Punch a couple holes in the plastic wrap.
- Cook on high in micorwave for 1 ½ minute.
- Add sugar snap peas and cook for 1 minute more. Cook until al dente. Drain water.
- Add butter, mint, lemon zest, salt and pepper.
