Green Beans with sugar snap peas and mint recipe

  • 1 pound fresh green beans trimmed and cut diagonally into 1 1/2 inch pieces
  • 6 oz fresh sugar snap peas cut diagonally in half
  • 2 Tb butter
  • 1 1/2 ts finely chopped min
  • 1 1/2 ts grated lemon zest
  • 1/2 ts salt
  • 1/4 ts ground pepper


  • Put the green beans in a bowl with water and cover with plastic wrap. Punch a couple holes in the plastic wrap.
  • Cook on high in micorwave for 1 ½  minute.
  • Add sugar snap peas and cook for 1 minute more.  Cook until al dente. Drain water.
  • Add butter, mint, lemon zest, salt and pepper.
