
Of all the "National Days" (seems like there's one for just about everything now...) we're partial to ones that have to do with wine, dogs, and cheese. So, we asked our friends, Baron and Stefani, owners of WhichCheese Food Truck to help us honor National Grilled Cheese Day! They've shared a recipe for one of their menu staples, the Yankee Melt.

A New York staple with Sonoma County flair - this hearty Pastrami Grilled Cheese sandwich is a crowd pleaser!
Makes 2 Sandwiches
Ingredients:
- Sliced Sourdough Bread - 4 Slices (we're partial to RedBird Bakery's sourdough!)
- Thin sliced pastrami - 8oz
- Sliced or Shredded Mozzarella Cheese - 8oz
- Parmesan Cheese - 4 oz
- 1 Caramelized onion
- Larson Family Winery Honey Truffle Mustard - 2 tbsp
- Olive Oil - 2 tbsp
- Butter - 2 tbsp
Directions:
- Cut your onion into thin strips - add olive oil and caramelize - low and slow gets you the best consistency!
- Spread mustard on one side of the bread (or both if you can't resist).
- Add Mozzarella and Parmesan on each side of the bread.
- Saute your onions and pastrami to bring to temp.
- Build your sandwich. Add butter to a hot pan - melt to perfection until you have your favorite golden color!
Tips:
- Have Easter Leftovers? Ham is a LOVELY substitute for pastrami.
- Looking for some greens? Arugula pairs perfectly (if you've had the Millerick Melt, you already know!)
